Everyone is always asking what I have been craving. This time around the oddest craving has been grapefruit. I never buy them usually, but now they are taking up all the room in my fridge. My secret? (Don’t judge…) I sprinkle sugar on top of each half.
What I am most excited for is to continue my grapefruit obsession well into the summer, post pregnancy. I’m thinking cocktails! Here are two refreshing grapefruit cocktails I can’t wait to enjoy.

GRAPEFRUIT MOJITO
{INGREDIENTS}

Muddle the lime juice, sugar, mint leaves and grapefruit zest until the mint is bruised and the sugar starts to melt in a cocktail shaker.
Add the grapefruit juice and rum. Fill with ice and shake well – until cold!
Strain liquid into glasses over ice and top off with the club soda. Garnish with a mint sprig and grapefruit wedge in each glass.

GRAPEFRUIT MARGARITA
{INGREDIENTS}

If you like a salt rim on the glasses (who doesn’t?), rub the lime around the edge of the glass and then dip the rim of each glass lightly in a plate of kosher salt. Set aside to dry.
Combine the grapefruit juice, lime juice, orange liqueur, and ice in a blender and puree until smooth.
Pour into a large pitcher and stir in the tequila. If youre not serving the margaritas in salted glasses, stir 1/4 teaspoon of salt into the pitcher of margaritas. Believe me, it will make a difference!
Serve ice cold.
