Cheers to the last few weeks of summer with this Grilled Peach & Bourbon Smash cocktail fromĀ Camp Cocktails : Easy, Fun, and Delicious Drinks for the Great Outdoors.Ā Mixologist, author, and mom of two Emily Vikre says she created this to go with her familyās favorite BBQ foodāribs. āThisĀ grilled peach smash is the perfect accompaniment. Grilling the peaches brings out their sweetnessĀ and concentrates their flavor, while just a hint of char pairs beautifully with any barbecue,ā says Emily.
Grilled Peach and Bourbon Smash
Serves 1
Ingredients
½ grilled peach
½ ounce (15 ml) fresh lemon juice
½ ounce (15 ml) maple syrup
2 ounces (60 ml) bourbon
Splash of soda water or ginger beer
Directions
- To grill peaches, cut them in half and place them, cut side down, on anĀ already hot grill.
2. Cook, undisturbed, until grill marks start to appear (4 toĀ 5 minutes), then flip and cook for 4 minutes on the second side. Allow to
cool before using in a cocktail.
3. To make the cocktail, in a shaker, muddle the peach. Add the lemonĀ juice, maple syrup, and bourbon, then add enough ice to fill the shaker
two-thirds full. Shake until well chilled.
4. Ā Double strain into a double rocksĀ glass filled with ice and top with a splash of soda water or ginger beer.
Note: Like any cocktail with a lot of soft muddled fruit, this drink is a littleĀ slow to strain because the fruit has a tendency to clog up the strainer. IfĀ you donāt mind fruit chunks in your cocktail, you can just strain throughĀ your cocktail strainer and not worry about double straining. Or you canĀ even drink the cocktail with all the fruit in there. You do you!
